Situated within the historic buildings of Fawsley Hall, Equilibrium will officially launch on 10th September 2008. Head chef Nigel Godwin has created a menu which combines modern British cooking with attention to detail resulting in an exceptional gastronomic experience. Located in the heart of the Northamptonshire countryside, and bordering the Cotswolds, Fawsley Hall is an elegant, striking country house hotel surrounded by 2000 acres and dating back to the 15th century.

Nigel Godwin trained at the famed Walnut Tree where he worked closely with Franco Taruschio for four years. Following placements at Gidleigh Park and Le Manoir aux Quat’Saisons, he went on to work at a number of top restaurants all over the country including Harvey’s Restaurant, Knockinaam Lodge Hotel and Homewood Park Hotel all of which gained a Michelin star during his time in the kitchen. Nigel has also been an active member of the Welsh National Culinary Team, winning gold medals in competitions around the world and cooking for high profile individuals such as the Queen, the Emperor of Japan, Nelson Mandela and George Bush.

Dishes on Nigel’s elaborate and inventive menu include starters such as his signature dish ‘Pigeon and it’s own Tea and Parfait, Pickled Pear, Celeriac, Hazelnuts’ and ‘Cornish Crab, Avocado, Oscietra, Lemon’. Main courses consist of ‘Pan Fried Monkfish and Frogs Legs, Alsace Jelly, Truffle, Artichoke Risotto, Lemon’ and ‘Poached and Roasted Lamb, Roast Chump, Creamed Potatoes, Sweetbreads, Parsley Jus, Kidneys’ while desserts include ‘Artichoke, Artichoke Crème, Toasted oats, Truffle Ice Cream, Olive Oil Gel’.

Fawsley Hall is steeped in Tudor, Victorian and Georgian history. Equilibrium can be found in the old kitchen which forms part of the original house dating back to its construction by Richard Knightley in the early 1500s. With previous occupants of the house including Queen Elizabeth I in 1575, whose original suite awaits 21st Century Guests.

Equilibrium’s fresh contemporary design sits well with Fawsley Hall’s colourful past. It’s colour scheme complements the restaurant’s historical features with mute tones of cream, olive green and lime green appearing throughout the dining rooms. Gothic back chairs covered in Zoffany Rossini linen create an intimate feel and crockery, cutlery and glassware have been carefully sourced from all over Europe, further enhancing the stylish surroundings.

Fawsley Hall is owned by Simon Lowe. In 1984, he opened ‘Palms’ restaurant in Kensington with two business partners which was followed by four more. He and his partners also owned the Texas Lone Star restaurants of which there were three and ‘Caspers Bar and Grill’ in Hanover Square, as well as Mortons Club in Berkeley Square. In addition Simon’s hotel portfolio included the Feathers in Woodstock and Bishopstrow House in Wiltshire. He and his partners went on to sell this group in 2000 and in 2001 Simon bought Fawsley Hall; more recently he has acquired ‘The Park’, one of the Southwest’s premier golf clubs and hotels, and ‘Grayshott Spa’ in Surrey, voted best UK Spa 2008 by Conde Nast. His work has recently earned him Conde Nast/Knight Frank’s 2008 Special Award for Excellence and Innovation in the Hospitality Industry. He is also recognised by Andre Martin’s Annual Awards as one of the UK’s best interior designers.

A combination of Nigel Godwin’s accomplished and imaginative cooking, the historic charm of the buildings and the rural location of Equilibrium at Fawsley Hall all contribute to it being an ideal food lover’s escape.
